That said you can bbq in a setup like this and I don’t see evidence this is grilling. No char marks on the top side and zooming in I don’t see evidence of a flame or even hot coals.
It’s not a typical way to cook skirt at all. Typically want to cook it on high heat quickly and then cut thin strips against the grain. Same for flank.
But you can basically smoke anything, so whatever you like doing. For me, it’s a matter of time/fuel investment vs payoff and most steaks just don’t get THAT much better with smoke / low heat.
You can,it’s just a cut that thin is going to be cooked through before the fat will capture much smoke anyway. You’ll get more overall flavor from quickly scorching it instead.

BBQ is the method of cooking meat by using smoke, it’s the smoke that forms of off wood, not wood chips, not coals, but wood. the taste comes from the type of wood that you use. Different types of wood in the Texas region along with different types of preparing the meat creates different BBQ. That why BBQ tastes different in W. Texas than in does in central Texas, than in does in E. Texas.
Please don’t embarrass yourself. If you don’t know this you’re officially not from Texas
