Why not raw honey

Raw honey has a indefinite shelf life and is good for you. I have a problem trying to stockpile because I keep eating it!

Sugar (honey) does not cause diabetes. Excessive fat (especially saturated fat) in your diet leads to insulin resistance, which is the root cause of diabetes. Having hardly any sugar in your blood at that point will make the diabetes worse, because your cells can't take up sugar from the bloodstream.

If food is scarce enough that you’re having to dip into your food stores, you probably don’t have to worry about Type 2 diabetes.

There are several pathogens and molds that can survive in honey so commercially it's generally pasteurized

Filtered and pasteurized honey loses a lot of its nutrients and actually reduces its shelf life. It also doesn't taste as good.

Cheapest I can find is 5 gallons for $60. I guess the price isn't terrible, but when you get to smaller denotions it gets pricey

I can get a 25lb bag of sugar for $18.99, figure 5 gallons is 30-35lbs, sugar is give or take half the price for same weight

This look very cheap.
Check if this is actual honey. Some import are not actual honey, but a mix made from glucose and other additive, which may contain some actual honey.
Ideally, buy local from a place which produce it them self.

I agree I get locally and spend $80 a gallon. They have a 5 gallon for $200 but to use you would have to repackage.

from my experience honey then to crystalize after a while. its not ruinned, but its a pain trying to boil it up and melt it again before using it.

I prefer crystalized honey because it makes way less of a mess. Just use a sturdy spoon for scraping it out.

Depending how it crystalized, I manage to scoop it out.
If it is too hard, I poor my warm tea in the pot, sake it a bit and poor it back to my cup. And that is how I sweat my tea with hard honey.

If you have the right climate and resources you can get Maple Syrup also. It just takes a lot of labor tapping the trees and collecting the sap, as well as a lot of cooking to turn it into syrup.
always buy local honey, and you might even be able to build a relationship with a beekeeeper and get a deal or even a good trade.
