Are there any A318 variants

I thought this would be an easy thing to figure out although it was evidently not

What do you mean variants? There are A318ceos. There are no A318neos.
The A320 type cert data sheet lists four version of the A318: -111, -121, -121, and -122.

Any variant excluding the -100 wether it’s an acj or ceo

there won't ever be a NEO variant of the A318. The 318 itself was very unpopular, too expensive for what it could do.
The original variants were either a passenger version or an ACJ version, or based on engine choice (two manufacturers offering two engine variants each)
Aside from that, airbus doesn't use -100/200 on the A320 family to differentiate by size like the 737, all the A318s, 319s, 320s, and 321s are basically the same size, with their differences under the skin(engine types, cabin layouts, cargo bay options, etc)

Are there any changes between A318-100 and A318CJ?

typically all the CJ variants have options for more fuel tanks.
The cabin outfitting is a whole other thing, instead of having the cabin fitted by Airbus, a lot of CJ variants go to a third party cabin finishing specialist for the high end fit up. Though the manufacturer still has to remain involved as they re-balance the aircraft

I don’t understand your question. All A318 variants are -1xx. You can’t exclude that.
