Fellow Brit here. Best cheese brands for cheese on toast besides Cathedral City?

Whenever I make cheese on toast, Cathedral City is the only brand of cheddar I've yet found that actually melts properly. Everything else just sort of browns in the grill. Anyone else found any good cheese brands that actually melt properly?

I live near Cheddar, so my obvious choice is Red Leicester. If it’s on toast, it has to be a slab, not grated.

Always hated mature cheddar so I do a mix of mild and medium cheddar with some Red Leicester gives you the taste without your mouth being punched with that really strong overpowering taste

Lidl do a lovely Red Leicester on their Deluxe range "Vintage Red Fox". Not sure if it would be good or wasted on toast, but the Snowdonia Black Bomber cheddar has ruined all other cheddars for me now.

This'll seem bonkers, but Lidl 600g blocks in the simple packaging really melt very nicely.
I've never liked Cathedral City or the brand cheeses to be honest.

I don't buy brand-name cheese. I just buy any extra-mature cheddar from a decent supermarket. I've never had a problem with it melting.

Reminds me of a Viz top tip I read. "If you want to keep your cheese fresh, but cathedral cheddar. Throw away the cheese and use the resealable bag to put a nice cheese in". Whatever it actually said was probably more concise

If you ever need a special cheddar, get their Cornish cove. So mature it crunches. Lovely stuff. Just can't afford to have it as the everyday cheese in our lives - waistline and purse would take a big hit, it's so good!

If you're wanting a bit of a smoky creamy hit, get applewood.
If you're adventurous, get bluesticks.

Seriously strong is my favourite, but close seccond is lake district cheese, those you can get in most supermarkets Ones that are available in supermarkets but online or in specialist shops/market stalls Snowdonia sheets company and chesire cheese company are both good
