Does your local ice cream man sell proper ice cream, or whipped?

Late twenties brit here, noticed when I was a child that when you go to the ice cream van, there's usually one of two options, the proper ice cream that resembles the stuff you get in a tub, and whipped, that resembles a white version of my left behinds after a curry. Interested to find out who's sells what where, and if one type is more common regionally and locally.
