Computer only boots if one monitor is plugged in

I just built a new computer and right now the computer only boots to Windows if one monitor is plugged in. If two or three monitors are plugged into the GPU, the computer will just boot loop, never making it to windows.
If only one monitor is plugged in, it will boot to Windows just fine and I can then plug in the other two monitors and everything works. Has anyone run across this issue before?
My specs are:
CPU: AMD Ryzen 5 7600X
Motherboard: Gigabyte B650 AORUS ELITE AX
GPU: MSI MECH 2X OC Radeon RX 6750 XT
RAM: Corsair Vengeance 32 GB (2 x 16 GB) DDR5-5200 CL40
Drive: Samsung 980 Pro
PSU: Phanteks AMP 650 W 80+ Gold
OS: Windows 11
Motherboard is on the latest BIOS and GPU has the latest drivers.

Not really. I ended up plugging my main monitor into the GPU and the other two into the motherboard which allowed my computer to boot properly. After a while though I switched over to a single ultrawide as the monitors I was using were quite old and only 1080p

Well, but my problem is with only one monitor (xiaomi 34" ultrawide)
I have it connected to my GPU (hdmi or displayport has the same result)
My problem is: if monitor is turned on, my computer boots.
If monitor is turned off, my computer does not boot and the BOOT debug light of motherboard stays on. I have to reboot the computer again with my monitor on

This firmware update fixed the issue for my 3080ti build.

I was just having this issue, and came across this thread. I solved my issue, so figured I’d share.
TL;DR: run an Nvidia firmware update to support DisplayID https://www.nvidia.com/content/DriverDownloads/confirmation.php?url=/Windows/uefi/firmware/1.0/NVIDIA_DisplayID_Firmware_Updater_1.0-x64.exe&firmware=1&lang=us&type=Other
Issue: PC will not post to BIOS or load the OS when connected to an LG 4k monitor.
Workaround: Connecting to an older 1080p monitor allows the PC to load to the OS, at which point the LG monitor can be connected and will work fine.
Solution: Run the linked firmware update and reboot.
I also saw people have the issue with older cards that needed a separate firmware update to support DP 1.3 and 1.4. That could be related.
My issue presented while swapping around a bunch of hardware. i7-12700k, Gigabyte 3080ti, DDR5 7200Mhz RAM on an LG 32GS95UE connected via DisplayPort.
