What is the best meal to cook in hot weather?

Quinoa with feta, cherry tomatoes, bit of red onion, cucumber, lemon juice and fresh mint. Served with a marinated chicken breast or vegetarian alternative and some roasted new potatoes. Very nice.

If you like pasta, but think, rightly, that sauces don't go in the heat, just puto finely chopped (you can use the chopper for ease) fresh tomato, grated cheese (your choice, but usually parmesan, grana padano etc) and fresh basil on top of your pasta. Dead easy, light, tasty, summery.

The best meal to cook in hot weather is one that doesn't need cooking! I've had quiche and salad with croutons for the past 2 days. Watermelon and feta salad for lunch. Might make a three bean salad tomorrow. Crudites, pitta and hoummus is another favourite. At an absolute push I'll make something with couscous, maybe with cherry tomatoes and pesto, or chopped veggies and pomegranate seeds.

My husband's salad. He buys bagged salad, but pre-cooked chicken breast, olives, salami, cheese, Italian salad dressing, tomatoes, etc. Throw whatever you like in it. It's cold but filling and easy to do. For me - if I get my act together the morning of a super hot day, I'll put the slow cooker on. It does not heat up the whole kitchen but you get a great meal at the end of the day. Very little effort.

Vegetarian stir fry. Takes about 7 minutes, single pan: oil with lazy garlic, ginger and chilli then add things like peppers, pak choi, mushrooms and fry for about 5 mins then add a pack of fresh noodles and a glug of soy sauce and a dash of lime or lemon juice and cook for 2 mins. That’s it.
