The thing with a rolling shell, is it’s way more work than you think it’s going to be.
I bought my Camaro, as a rolling shell. Came with a dash and moldy seats. I’m probably in this car $30k in parts. Some parts aren’t repoped, so you have to search. Some generic parts are incredibly expensive because they’re rarely bought.
But you have a blank canvas to make anything you want.
If you’re okay with not driving it for years while you throw money at it. It’s worth it.

How much metal work will you have to do? How hard or expensive is it to get all the missing parts? This ads up if you want the car to be complete or perfect.

If it's a good price and in good shape and you have a significant budget and a lot of time to work on it and a lot of experience building cars, then maybe.
Otherwise, no.

depends, are you willing to do the work itll take to get it back on the road? id inspect very carefully for rust cause these were known for it.
