Sunday dinner for two: any practical tips?

My partner and I have been wanting to start a sunday dinner tradition for ages. So far we've been out for dinners, but this is rather costly. What prevents me from making a homemade dinner is mostly cause it includes a lot of food and it's just the two of us. Eating leftovers every now and then is fine, but I don't want to eat it through the week, especially not if we do this "every Sunday". Sunday roast is a new concept for me as I'm not originally British. I'm good on all fronts, but the meat is a challenge since it differs so much from my own cooking style. Any tips on cooking for just the two of us? Some easy first time recipes? Also practical tips are welcome. Is it acceptable to slice a gammon into 4s and freeze it? Same for the other meats? I'm mostly afraid I'll spend a bunch on a big rump of meat that's obviously too big for the two of us
