Well the sun and heat are here, what do you think is a must have at any British BBQ? Doesn't have to be food.
I think anything on a skewer is a must, it's so fun to pick pieces off the stick with your teeth.

I love a steak on a BBQ. Extra fat steak, get a good sear on it and then let it hang out away from direct heat to cook to med/rare, slice into strips and multiple people can enjoy. That was just under £21 tho. So not exactly cheap. But if you are bulking out food with cheaper stuff like burgers and sausages, a couple slices of steak each is just perfect.

Halve baby potatoes. Throw them in a baking tray along with olive oil, bacon, red onion, fresh rosemary and garlic. Bake in the oven until charred.
Remove and when still slightly warm add mayo and a tablespoon of wholegrain mustard.

I got a big pack given to me and tried them a couple of times last year. They're insanely difficult to get started, to the point where I feel like I'm missing something.
Once you've got them started though they're amazing, they give off a really consistent heat and keep going for ages.

I found them easier to get going without a chimney to be honest, it took a pack and a half of firelighters before they got going. I stacked them into a little "oven" shape and just kept feeding firelighters in.
Maybe they need a better type of firelighter, I should probably look into it more. I tried absolutely blasting them with my Mapp gas torch and it didn't seem to help much.
It might be that you need a bit of lumpwood or standard briquettes to get them started. I'll be having a BBQ this week so I think I'll try half a chimney of lumpwood and top it up with the posh briquettes.

When I first started getting in to ‘proper’ BBQ, I thought charcoal was just charcoal. Then I did my research and bought different types and I can see why the cheap stuff from home bargains is cheap!
I only use briquettes but I’m thinking of getting some lump wood for the next cook and see how I can get on with that.

Yeah I used to think the same. Pretty much any lumpwood is a big step up from the standard briquettes. Even though the pieces are all different sizes you still get a good even burn and it doesn't start dying off the second you start cooking over it.
The Globaltic hex briquettes are something else though. I did a bit of looking around on them last night and they're made from hazelnut shells compressed and bonded with natural starches. I'd forgotten as well that they're nearly smokeless. They reckon up to 8 hours burn time which I can believe, I could have easily cooked another full BBQ a good 2-3 hours after we'd finished eating.
They do state that you need more firelighters than usual to get them started so I guess that's normal. I do think a bit of lumpwood would help get them started in a chimney though.

Charcoal is definitely better but most of the flavour from the oil that drips onto the coal and vaporises.
A decent gas barbecue gets you most of the way there with the advantage that it's a lot more convenient when you just want to throw a couple of bits on mid week when the weather's nice.

My family tradition was we did BBQs in courses Burgers and Sausages was round 1 feed the kids so they shut up and go play away from the adults Serving 2 was the nicer stuff, and some skewers for the adults, actual buns. Serving 3 was anything leftover, take something home it needs to go. Serving 4 was the close friends, salmon and mackerel, a couple bottles of wine.
The main reason for this was I grew up with the second biggest garden on the street, a big gas BBQ that my dad found somewhere, and a Costco membership. We'd have everyone over.

So two options here, serious or funny.
Seriously? - These days I get a solid single piece of meat. Whether chicken, beef, lamb or pork, the time has come to honour the sacrifice. So I will spend an inordinate amount of time in advance sorting the marinade, brine or rub. Then I lay my briquettes and away we go, with smoke or without, low and slow. And I end with vegetables off the grill, from courgettes, mushrooms, asparagus, aubergines and peppers amongst many options.
If it’s done well, it’s magnificent. And for the meat, to make sure it’s safe but tender and juicy I’ll use a Meater probe to track the cook.
Otherwise, and this is the less serious part, I hand the tong over to the man in thongs, my Aussie neighbour who will proceed to burn burgers and turn pork sausages so black, we might as well eat the briquettes for all the good it will do us.

If you actually want to do really good bbqed food go beyond cremated poor quality burgers and sausages. Coals give all sorts of food fantastic flavour.
Bbqing tandoori style chicken on a BBQ is a massive crowd pleaser and feels British adjacent for want or a better description.
Bbqing vegetables is also scoffed at far too much but can get amazing, genuinely delicious results. Treat your BBQ like a versatile tool for flava creation and you can get amazing results.

I stopped doing British style. BBQs a long time ago. I smoke meat like in the states. Ribs, sausages or pork shoulder usually. Then chuck some burgers for the kids on the BBQ while the other meat rests. Everyone way prefers the American style meat.

Cube up a block, skewer with red onion and a couple of cherry toms, brush with olive oil, a squeeze of lemon, and a pinch of dried oregano. Three or four minutes a side till you get char marks. Eat hot straight off the stick before the cheese goes squeaky cold.

I have a bunch of meat that I've been buying ready, reduced for a BBQ, always pick up fish of some kind though, pack it straight in the freezer.
Got a leg of lamb, a couple of whole sea bass and a rack of ribs with maybe some chicken wings (might eat these before a BBQ).
The sea bass will be placed on some oil with sliced lemon in a wrap of foil, for the kid as he likes it basic and will help me cook it.
Got some fish kebabs on sticks too so hopefully they go down well.
Will have to try watermelon on the day too.

Thick cut red and yellow bell peppers are the first to go on. Arranged around the edge so they don't get direct heat from the coals. They become beautifully sweet and almost melt as they slowly cook from the indirect heat of the coals and radiated heat from the lid of the BBQ.
