Those black containers are parts of the WETS system and some contain water. There are some in the front of the cabin and some are in the back. Allows the onboard flight test engineer to transfer water between them to maintain strict CG limits (to offset fuels burn) required by tests. I was one of those engineers almost 15 years ago.

Not really. This adjusts the overall CG based on moment arms, and second moment arms for flight dynamics. The instrumentation is later analyzed to verify Al, design parameters are met. Weight of pax is but a very small contribution compared to-area to really big issues like fuel loading. Pax

On our Honeymoon right now and the plane we took from YUL to CUN was a B777-300ER. Biggest plane I've been on before. I am used to A320s. Looking up, the engine housing on the B777-300ER is almost the same size as the fuselage of the A320s.
Please excuse my nuance ignorance, I am just a curious guy who thinks this is neat. I will accept explanations, as I love to learn!

These tanks are used to simulate the weight of the passenger or general cargo. They can also shift the aircraft's center of gravity by simply adding more water to one side.
An aircraft goes through various configuration tests before it's commissioned.
They are filled with beer.

Not just CG shifting. They are actually used more for heat sinks/cooling. They have heaters built in and they stress test all the aircraft electrical systems by those heaters and using the tanks as giant heat sinks. They already have to strap and plumb the tanks in, it’s waaaaaay easier to throw a heater element into the tank versus figuring out an alternative way to add a safe and reliable way to simulate heavy electric loads.
Got to take a tour of one of the 777X’s this past year while it was doing extensive testing at my airport since we provided some technical assistance. Got to see a LOT of really amazing stuff on it.

Yep, exactly that. They basically run the aircraft through the whole CG envelope — forward-heavy, aft-heavy, balanced, weird edge cases — and see how the handling lines up with the predicted data.
The water ballast tanks make it stupid easy: pump a few hundred kilos forward or aft and boom, new CG. Way safer than loading/unloading pallets or people while flying.
Typical certification runs check things like: • Stall behavior at different CGs • Takeoff rotation forces (aft CG = spicy rotation) • Pitch stability and trim requirements • Fuel burn vs. CG sensitivity • Autopilot response • Emergency procedures under funky load conditions
Those black tanks are usually plumbed into a closed loop so they can shift thousands of kgs of water within minutes.
And sadly, no beer. Engineers aren’t that lucky. 🍺😄

It's for weight distribution testing in the aircraft. Water is pumped between the tanks to change where the wieght is. It's easier to move water than to move soild weights and secure them to the aircraft, with the added bonus of being able to do it safely in flight.

If I had to design a test plan for flight testing weight and balance and how it affects flight performance on a new airframe, then it might make sense to have a modular system of tanks that can be filled with water and have a way to rebalance the tanks I flight using pumps and cross flow between tanks.
Sand bags or dummies would have a very high material cost and a very high labor cost for loading and shifting balance. Using water also allows you to change weight and balance in flight thus saving money on your test flight
